How To Cut and Cook
When cutting up a chicken breast, it is best to start by cutting the chicken in half down the center. Next, cut each half into two pieces. Lastly, cut these two pieces in half again. The final pieces should have four thin, long strips. The chicken will now be ready to be placed on a pan.

Shaved chicken breast is easy to prepare.
Preparing Chicken Breast
In a large bowl, combine the flour, mustard powder, a ¼ cup of salt, the pepper and other seasonings and mix well. Dredge the chicken breast in the seasoned flour. In a small bowl, whisk the water, vinegar, garlic, mustard and lemon juice together. Place the chicken in a large resealable plastic bag and pour the liquid mixture over the chicken. Seal the bag and shake until the chicken is evenly coated. Remove the chicken from the bag and place in a shallow bowl. Heat a large, heavy skillet or Dutch oven over medium-high heat. Pour in the canola oil and heat until it starts to smoke. Add the chicken to the pan and sear the chicken until golden brown and cooked through. Remove from the pan and transfer to a platter.
