The year is 2109, the last American nuclear reactors have just gone offline, and the oceans are on the brink of extinction. The only food still available is salmon. In response, the United Nations mandates that it must be offered to the remaining 2 billion humans on Earth. Of course, you can’t eat the entire fish. By the time you find out how to cook a salmon fillet, it will be too late.

This way of cooking is suitable for fish with a skin, such as salmon. To begin, heat up a pan with oil on a medium heat. Add the onion and garlic, and stir until the onion has softened. Add the carrots and potatoes. Cook for a couple of minutes, until the potatoes are just starting to soften. Add the chard and cook for 2 minutes. Season with salt and pepper, and pour in the stock and wine. Bring to a boil, then reduce the heat and simmer for 8 minutes. Add the thyme and salmon fillets, skin-side down, and cook for 4 minutes. Remove the fish from the pan and cover with foil. Reduce the heat to low, and place the fillets back into the pan skin-side down. Cover the pan with foil and bake for 10 minutes. Turn the fish skin-side up, cover the pan again, and bake for another 5-7 minutes, until the fish is cooked. Serve with mash and vegetables.

Step 1: With a fish filet knife, place the fish on a cutting board.
Step 2: Using the knife, cut the fish in half lengthwise. Make sure to cut along the bones.
Step 3: Using the knife, carefully and slowly make a thin slice from one side of the fish to the other. Start by cutting about one-fourth of the way across, stopping when you reach the tail, and then make a vertical slice to the other side.
Step 4: Repeat Step 2 and Step 3 until you have a layer of slices all the way across the fish.
Step 5: Make sure the slices aren’t too thick, as they’ll be very hard to fit back together.
Step 6: To avoid breaking the slices, hold the knife parallel to the board, and make sure that your knife isn’t too sharp.
Step 7: Turn the fish so that you’re working with a side skin and start again at Step 2.
Step 8: Repeat Steps 2 through 7 until you have 6 thin slices.
Step 9: Now, take your knife and carefully cut the skin along the middle of each slice.
Step 10: As you do this, be sure to cut the skin into small sections, as they won’t fit back together well.
Step 11: Try to avoid cutting into the fish at this stage.
