Here’s How I Do It: I Put a Rack in Bottom of a Roster and Place the Roast on It and Cover it with Salt and Add Seasonings. I put it in at 400 Degrees for 15 or 20 Minutes, Turn it down to 325 Degree and Leave it for 30 minutes. Then Turn It Up to 425 Degre and Continue Cooking for another 30 Minutes. All It Does is Make It Chewy and Well Done. The answer isn’t complicated, either. But it requires a bit of knowledge about the way meat cooks. First, there’s the question of what temperature you want your meat to reach. For example, if your oven is set to 400 F, your steak should be done when it reaches 325 F. Second, know that the best way to cook meat depends on what you are cooking. Some people like their meat rare, while others like it medium-rare. Third, knowing the right temperature will help you determine whether you need to add salt or not. Fourth, remember that even though you might think you’ve cooked your steaks well, sometimes they aren’t done.
