After the tenderloins have been in the oven for 20 minutes, remove the roasting rack and turn the tenderloins so they’re not directly over the hot surface. Add two teaspoons of oil to the pan and let it heat. Once the pan is hot, add the tenderloins and brown them on both sides. The key here is to not move the tenderloins while they’re in the pan.
