Ingredients. 1 pork tenderloin 1 apple 1/2 cup chicken broth 1 cup fresh brussels sprouts, stem and leaves cut in half 1/2 cup dried apples 1/2 cup brussels sprouts leaves and stems diced 1 medium onion, diced 2 cloves garlic, minced 2 tablespoons honey 3/4 cup apple cider or apple juice salt and pepper Instructions. Begin by preparing the brussels sprouts and apples. Steam or microwave the brussels sprouts until tender crisp and halve apple. Drain the brussels sprouts and the apples, and set aside. While the brussels sprouts and apple are cooking, heat a large skillet or sauté pan with olive oil and garlic. Saute garlic for about 30 seconds, and add the apples, and brussels sprouts. Stir to coat with oil and season with salt and pepper. Cook for about a minute, and set aside. While the apples and brussels sprouts are cooking, heat a large stockpot on medium heat. Season the pork tenderloin with salt and pepper. Sear the pork tenderloin for about 3 minutes on each side, and transfer to the slow cooker.
