Ingredients You will need: • 15 lb. spare ribs • 1 – 15 lb. stewing or boneless pot (depending on the recipe) • ½ onion • ½ teaspoon ground ginger • ½ teaspoon minced garlic • ½ cup soy sauce • 2 tablespoons Asian sesame oil • ¼ cup brown sugar • ½ cup ketchup • 2 cups water Directions Turn on the pressure cooker to low heat. Season the ribs with salt and pepper. Add the onion, ginger, and garlic to the pot. Toss the ribs in the mixture until evenly coated. Cook for 15 minutes. Then carefully open the lid. Cook for another 15 minutes. Then carefully remove the ribs from the pot. Pour off the onion, ginger, and garlic. Add the soy sauce, sesame oil, brown sugar, and ketchup to the pot. Stir to mix. Return the ribs to the pot. Sprinkle the remaining brown sugar over the ribs. Close the lid. Turn the heat up to medium. Cook on the high heat for about 3 hours, or until the ribs are tender. Allow to cool for 10 minutes before serving.
