Make sure your meat is fresh
Pork shanks are commonly found in Chinese and Japanese cuisine. Although they are more expensive than other cuts of meat, they are a good source of protein. Pork shanks have less fat than other pork cuts, so you will not need to cook them for very long. You will need to soak them in plenty of cold water for a few hours. Drain the water, and place the shanks into a large pot. Cover them with some cold water, add 2 or 3 bay leaves and a few peppercorns. Bring it to a boil, then reduce the heat to a simmer and leave it to cook for an hour. After one hour, the meat should be tender, and the bones will have loosened. Using tongs, remove the shanks from the pot and place them on a dish. Let them cool slightly before removing the bones, which you can then discard. Serve the shanks on a warm plate, with your favourite sauce.
