How To Cook Pork Pot Roast?

Cooking a pork pot roast is something I don’t do very often, so I wasn’t sure what to expect. As it turns out, it was an easy task. The only tricky part is that you have to give the roast a firm poke every time you poke it to let it cook evenly. A well-seasoned roast will be much easier to cook and will be delicious regardless of whether you are a novice or an experienced cook.

Ingredients

Season the roast with 1 teaspoon salt and 1/2 teaspoon each black pepper, black mustard seed, and cayenne pepper. In a 12-inch skillet, heat 2 tablespoons of the oil over medium-high heat until hot. Add the pork and cook for 5 minutes. Turn the roast and cook until browned on the bottom, 4 to 5 minutes. Transfer the roast to a plate. Add 1/2 cup of the broth to the skillet and cook, scraping the bottom of the skillet to release any browned bits, until the liquid is reduced by half, about 1 minute. Return the roast to the skillet and pour the remaining 1 cup of broth over the pork. Reduce the heat to medium-low, cover, and cook for 1 1/2 hours. Add the remaining 1 tablespoon of oil to the skillet and continue cooking, uncovered, until the pork is tender, about 1 hour more.

You’ll want to reduce the heat as the water evaporates, and remember to replenish the water when needed.
