• Pork cutlets (sliced pork belly)
• Sliced Chinese cucumber
• Sliced onions
• Shaoxing rice wine
• Salt
• Chinese cooking wine
• Peanut oil
• Toasted sesame oil
• Fresh ginger
• Spring onion
• Cornstarch
• Garlic
• Ground white pepper
• Chives
The chef slices the pork cutlet into thin strips, then tosses the strips in a bowl of sesame oil, salt, pepper and cornstarch. Then he tosses the strips in a dry pan on a medium heat and browns the strips, flipping them halfway through. Once the pork is browned on both sides, he removes the pork and tosses it back into the bowl with the oil, salt, pepper and cornstarch.
Then he places the pork back in the pan, add in the sesame oil, Chinese cooking wine and white pepper, and caramelizes the pork again. He adds the ginger, onion, and cornstarch, tosses the pork, and sautes the pork on a medium heat for about 5 minutes.
