To make this sausage, you’re going to need to first grind your sausage. Grind your sausage meat, using a grinding plate with a 1/4-inch diameter. If you’re using an electric grinder, you’ll need to adjust the controls until the sausage is finely ground. If you’re using a hand-crank meat grinder, follow the manufacturer’s instructions. The most important thing you can do is make sure the material is thoroughly ground. Add 2 tablespoons of salt, 1/2 tablespoon of black pepper, and 2 teaspoons of smoked paprika. I’d also recommend 2 teaspoons of cayenne pepper for a little kick. Add 2 teaspoons of cumin. I like to add rosemary, but feel free to add any herbs you’d like. Then, add 3 teaspoons of garlic powder and 1 teaspoon of onion powder. Mix it all together. This mixture should have a nice, coarse texture. Then, add 1 tablespoon of sugar and 1 teaspoon of salt. Mix that in. Transfer the mixture to the refrigerator for at least 1 hour, or overnight. Then, remove the sausage from the refrigerator and form into a log about 10 inches long. To do this, start by making an opening in the middle of the sausage log. Then, push the sausage meat through the opening using your fingers. Then, wrap it with plastic wrap, and form it into a log.
