Preheat the oven

Turn the chops every 15 minutes or so. They should be ready after 45 minutes, but there’s no harm in leaving them for longer if you want to. Trim the belly, remove the rind and all the internal fat, rinse with cold water and let dry in a pan.

Combine the salt, pepper, paprika, celery salt, and garlic powder in a ziploc bag, mix them with your hands.

Season your pork belly on both sides with this mixture.

Rub the belly with the canola oil and place it on a rack in a cold pan, let it marinate 1/2 hour.

After marinating, heat the oven to 275 degrees.

Put the pork belly in the oven and let it cook for 3 hours.
