Pan-Fried Steak
There are two different kinds of steak. Top round steak is made of the muscle that lies on top of the bone. It can be used in the same way as beef tenderloin. However, it has a little more flavor and a little less tenderness. Rib eye or eye of round is the muscle which lies underneath the rib bones and is fattier than top round. It is traditionally cooked with a little more fat and a little more black pepper. For the best results, be sure to cook it for a short time at a lower temperature.

Steak with Sauce
Cube steak is a thicker cut of meat that is usually served grilled or broiled. Cooking cube steak is easy, especially with a cast iron skillet. When cooking cube steak in a skillet, you will typically want to use about a tablespoon of olive oil, and about a half teaspoon of salt. When cooking cube steak, you should have your pan on high heat. You may need to brown the cube steak first. This can be done by cooking the cube steak for three to five minutes in the pan without any fat or oil. The cube steak will then be ready when the internal temperature registers at about 135 degrees. Once the cube steak is browned, add some olive oil and a half teaspoon of salt to the pan. Cook the cube steak for three to five minutes without moving it. Remove the cube steak from the pan and set it on a paper towel to drain. Once the cube steak is cool, chop it into cubes.
What’s the Best Way to Cook a Cube Steak?
Cube steak is very lean and needs to be cooked over a hot skillet or grill. The steak should be no thicker than 1/4 inch, so it cooks quickly. Cubes of meat must be cooked to 160F, as determined by a food thermometer. Steaks that are cooked properly will look pink in the middle. Steaks that are overcooked will be gray-colored, dry and tough. If you are cooking cubed beef in a skillet, the meat should be cooked on both sides, so the steak is evenly cooked. If you’re using a grill, put the steak on the grill and sear it on each side. This will give the steak a good flavor and make it easier to eat.
