People in Korea often cook pork chops the way Chinese Americans cook duck. The end result is a crispy pork chop. But when Koreans cook pork chops, they pan fry them, then add a bit of water to the pan, and finish them off in the oven. Here’s how to do it.
Use the pan
Pork chop is usually cooked in a single piece. But with this method, you are guaranteed to get a very crispy and juicy pork chop. We will be using a frying pan, which can be found in most kitchenware stores. Pour a little bit of oil in the frying pan and heat it up to medium heat. Make sure there is enough oil to fully cover the pan. Add the pork chop to the pan and set it on medium-low heat. Turn it over to brown the chop on the other side. Do this until the chop is well-browned on all sides. Remove the chop from the pan. Let it sit for at least 5 minutes before serving.

While the chop is marinating, prepare the sauce. Heat a wok or large skillet and add some sesame oil. Add the chopped garlic and green onion and stir-fry for 1 minute. Then add the grated ginger. Stir-fry for another minute. Next, add the chili sauce and stir-fry for 2 to 3 minutes. Lastly, pour in the soy sauce and bring the sauce to a boil. After the sauce is boiling, add the diced tomatoes and adjust the seasoning to your liking. Once the sauce is at the right consistency, add the pork chop to the sauce and toss. Then, add the scallions and chives, and cook the pork chop for about 5 minutes.
