1 box extra-thin lasagna noodles
1 large egg, lightly beaten
1 cup cottage cheese
2 Tbsp. grated Parmesan cheese
1 cup shredded mozzarella cheese
1 package (8 oz) sliced mushrooms
1 green bell pepper, julienned
1 red bell pepper, julienned
1 carrot, grated
1/2 onion, grated
1 jar (4 oz) sliced mushrooms
2 tsp. chopped garlic
1/4 cup chopped fresh parsley
Preheat oven to 375° F. Coat a 13-in. x 9-in. baking dish with cooking spray. Combine the egg, cottage cheese and Parmesan cheese in a shallow bowl.
Beat the egg mixture until blended.
Stir together the mozzarella cheese, vegetables and garlic; add to egg mixture. Add to the noodle mixture and stir to coat; transfer to prepared baking dish. Bake, covered, for 30 minutes. Uncover; bake 15 to 20 minutes longer or until cheese is melted. Cool for 10 minutes before serving.
