Place a skillet on the oven to heat up. Put a wire rack on top of the skillet. Spread half of the canola oil onto the pan. Put the chicken breasts on the wire rack and season with salt and pepper. Close the oven door and let the chicken breasts cook for 15 minutes. Remove the chicken breasts from the oven. When they’re cooked, flip them over and cook for another 15 minutes. Remove from the oven and season with salt and pepper. Put the chicken breasts back on the wire rack and top with some olive oil. Sprinkle some salt and pepper on top. Put the skillet back on the oven and bake for another 30 minutes. When they’re ready, flip the chicken breasts over and cook for another 10 minutes. Remove from the oven and sprinkle with some salt and pepper.
