Cooking the Adobo

How to blend the spices
Now that you’ve washed and dried your spices, let’s blend them together and make your adobo recipe. You will need two cups of pepper, one cup of garlic, two tablespoons of fish sauce, one cup of soy sauce, one tablespoon of onion powder, one tablespoon of oregano, one tablespoon of thyme, one tablespoon of cloves, and two teaspoons of black pepper. Place all of the spices in a glass container or bowl and stir with a spoon. You will notice that the liquid will start to turn slightly darker and smell a bit like an onion. This is because the onions have released their moisture, so we need to return the spices to a liquid state.
What to add to the spice mix
The spice mix in adobo is made up of different spices and different herbs. To spice up your meal, add different types of peppers such as the jalapeño, poblano or Anaheim pepper. Other spicy ingredients to include are garlic, onions, lemons and limes. Dried herbs can be added such as oregano, basil, thyme and cilantro.
