From time to time I like to pull out my cast iron skillet and cook up a batch of brined pork chops. The brine is made from apple cider vinegar, salt, and a dash of liquid smoke. These chops are then grilled until golden brown, and topped with cracked black pepper and minced garlic. They are so good, they are the perfect lunch. I like to cook them on a Sunday to enjoy them over the week. They go great with a nice big salad, with corn on the cob, a tossed green salad with apple cider vinaigrette and extra sliced apples, or with my bread and butter squash squash. They make for a great meal.
