This is why it’s really easy to just buy the pork shoulder and do all the cutting up yourself. First off, get yourself a pair of really sharp kitchen scissors. These should be razor sharp. They should be able to easily cut through the tough membrane on the inside of the shoulder. You can often find this membrane on the underside of the shoulder. A pair of kitchen scissors should be able to easily get through this membrane. These scissors can also be used to help separate the shoulder into smaller pieces. Cut along the bone on the underside of the shoulder. This bone is called the spine of the shoulder. This is where the shoulder blade is attached to the rest of the shoulder. Once you have separated the shoulder in half, you can start to separate it further into smaller pieces. Place the shoulder blade and ribs aside. This is called making the shoulder “an easy piece”.
