the five-step process
You may not be cooking a five-step process every day, but some of the time you may need to cook something a little more special. For that, we’ve included a basic step-by-step process for cooking boneless pork ribs on the stove. This is the ideal situation when you don’t have access to a grill or a smoker.
First, we’re going to cut the meat from the bone. I’m using a chefs knife, but if you have access to a kitchen shears, that will work just as well.
Next, lay the pork skin down. Depending on the thickness of the ribs, this can be done with a towel, or you can lay them on a cutting board.
Then, cut the pork ribs in half.
Turn the meat so it’s skin side down on the cutting board.
Cut each piece of rib in half and trim off any extra fat or connective tissue.
The next step is to remove the membrane and the fat.
Turn the ribs on their sides, so the membrane is underneath.
Grasp the membrane and pull towards you.
The membrane should pull off in one piece and the fat should come off as well.
Take the fat that was pulled off and discard it.
The membrane should now be loose.
Take a sharp knife and cut the membrane off the ribs.

The best choice for ribs is pork. The ribs can be boneless, or you can use a rack of baby back ribs. If you’re looking for a cook time, the usual suggestion is around 4 hours for baby back ribs. But you can also find recipes that say to cook for only 2-3 hours. This means that you won’t have to worry about burning the meat.
