Trim excess fat
If you need to cook a boneless center cut pork roast, the first thing you need to do is trim the fat from the roast. There are a number of ways to do this, but one of the most effective is to use a large serrated knife. You can start by cutting off the two big flap of fat that run from one side of the roast to the other. Then, cut off a little more fat from the edge of the roast. Finally, trim any extra fat that you see.
Select a lean roast
Check for tatami folds. These indicate that the meat is too fatty. Depending on your oven and preference, you can choose to cook the roast whole or in half. Take it out of the oven, allowing it to rest for 5-10 minutes. Before carving, brush the roast with a sauce or sprinkle with salt. The best way to serve this roast is with mashed potatoes and gravy. Cook to desired doneness
The following method can be used to cook any boneless center cut pork roast. Cut pork roast in half or thirds. Let the roast sit at room temperature for 15 minutes. Place the roast on a cutting board, meat side down. With the heel of your palm, press firmly to flatten the meat to one side of the meat. Use a tenderizing mallet to pound firmly on the meat. Do this until the entire cut is a uniform thickness. Cut the flattened meat into three or four pieces. Repeat the flattening step with the other side of the roast. You should end up with a flatten piece of meat about 1.5 inches thick.
Remove from pan
After cooking your roast, pull it out of the pan and let it cool for a few minutes. This will allow it to drain any excess fat. Once it has cooled down, use a paper towel to dry the meat. You may want to pat it dry before you remove it. Then, you can store it in a plastic wrap or aluminum foil for later.
