As far as the difference in cooking times, well, let me tell you that I have seen both methods work quite well. For example, my slow roast chicken is done in 8 hours and my fast roast is finished in 6 hours. And I did not change the recipe. My slow roasts were done perfectly every time I tried them. That is why I think that having a slower method makes sense. Also, when you make a recipe, don’t forget to check the ingredients. You should always check whether the ingredient is listed in order or not. Ingredients are sometimes listed backwards. Don’t worry about it.
