While it is likely that you will enjoy the same taste with your beef shoulder steak whether you buy it fresh or frozen, there are some things to consider to make the cooking and serving process more enjoyable. Firstly, for a much more unique flavor, you may want to consider cooking it to medium-rare or medium. You can then slice it thinly and serve it with slices of bacon, blue cheese, crispy onions, or any of your other favorite ingredients. If you’d prefer to stick with your normal preferences, you can serve it with cream gravy or a simple pan sauce.
Shoulder Steak Cook Methods
With a lot of today’s steak, the shoulder is the cheapest part of the animal, as it is very inexpensive to raise. But shoulder steak can be tough and dry, unless you know the proper cooking method. The best way to do this is to use high heat, in which case the beef will need to be seared first. The beef must then be cooked longer than you would cook a more expensive cut. At that point, the outside of the meat needs to be seared again to give it that nice brown crust. And, at the end, you should wait until the meat reaches the medium rare, or 155ºF, stage.
