Using an electric hand mixer, beat butter and brown sugar on medium speed until foamy. Increase to high speed and beat until pale and light. Reduce to medium and gradually add the flour mixture, beating until just incorporated. Continue beating on high until dough is smooth, about 2 minutes longer. Turn out onto floured surface and knead briefly. Roll out to fit pan, patting down excess dough. Crimp edges with fingers. Chill for 20 minutes or until firm. 17.
