Lemonade: Puree all lemonade ingredients including the juice and zest. Strain through a fine sieve and refrigerate. 14. Peach Cobbler: Cut peaches into wedges and arrange in bottom of greasing dish. Layer with pecan halves and peach slices. Cover with mashed potatoes and cover with vanilla icecream. Refrigerate until serving time. 15. Cranberry Sauce: Put cranberries in heavy sauce pan over low heat. Simmer until cranberry juice has reduced to about 1 teaspoon. Let cool. Purée in batches in processor. Return to sauce bottle. 16. Pineapple Upside Down Cake: Preheat oven to 350°. Grease and flour a 9-inch cake pan lightly. Sift together flour and baking soda. Set aside. Using an electric hand mixer, beat butter and brown sugar on medium speed until foamy. Increase to high speed and beat until pale and light. Reduce to medium and gradually add the flour mixture, beating until just incorporated. Continue beating on high until dough is smooth, about 2 minutes longer. Turn out onto floured surface and knead briefly. Roll out to fit pan, patting down excess dough. Crimp edges with fingers. Chill for 20 minutes or until firm. 17.
