Line it with aluminum foil. Hot grease will not stain this metal, while the aluminum will. You can also use aluminum pans, though I would not recommend it. Aluminum is harder than glass and will scratch easily. If you’re using a pan without a lid, make sure it fits snugly over the top of your pan. A lid is important because it prevents grease from dripping into the bottom of cooking area. Also, keep the lid clean. Glass is easy to scratch, aluminum is hard to clean, etc.
