It’s an old-fashioned way of preparing potatoes that is sure to put some sparkle in your eye. In addition to creating a flavorful and delicious side dish, the salt in these potatoes will make your kitchen smell divine. A pair of small baking potatoes works well for this recipe. Small potatoes are typically firmer in texture, so they’re easier to mince and mash. If you prefer softer potato chunks, consider boiling larger potatoes before baking. When you’re ready to bake the potatoes, preheat the oven to 350 degrees F. Fill a baking dish with a mixture of 1/4 cup table salt and 1/4 cup water. Add the potatoes to the dish and, using a spoon, spread the salt over the potatoes, coating them in the liquid. Bake for about 45 minutes. When the potatoes are finished baking, mash the potatoes with a fork, or use a potato masher. Season with additional salt, if desired. This recipe can easily be doubled or tripled.
