Then, you will need to remove the chicken’s neck and feet. You can do this by grasping the chicken’s body and pulling it downwards towards the tail. Then, reach under the skin and grasp the legs and wings. Pull them off and discard. Place the chicken on a clean cutting board and cut the breast into two or four pieces. This will leave you with a whole chicken, minus the breast. You can then pat the chicken dry with a paper towel.

You are basically just going to increase the amount of seasoning you put on top of the chicken. You can use anything that you want to spice up this chicken, as long as it is not made with nuts and gluten. I like to use black pepper, paprika, salt and pepper, garlic powder and onion powder. I also like to use something that is not pre-seasoned, but would still compliment the chicken. I use almond flour, which is a neutral flour. You can also use whole wheat pastry flour if you want to go a little healthier. This goes on top of the chicken, but it is not actually on the chicken. You just want to make sure that you are really covering the chicken. You can use whatever you like to put on top, but you are going to make sure that you have it all covered. The chicken is essentially “dump-tanked”.

Preheat the oven to 180°C. Put the chicken in the center of the oven. As soon as it comes out of the oven, you can brush it with cooking oil to give it a crispy outside. When the chicken comes out of the oven, let it rest for 20 minutes and then start carving.
