How to Spiral Cut a Ham
The key to cooking ham is the internal temperature. If you set the internal temperature too high, it will toughen. If you set it too low, it will not render. The best way to judge internal temperature is to stick your finger in and press lightly. If it feels warm, it’s warm. This works with the meat as well. If you cook the meat for too long, it will become very dry and tough. If you cook it too short, it won’t be cooked through. If it is neither too hot nor too cold, it will be tender. To help it cook evenly, you want to butterfly the ham and press it flat on the cutting board. After that, slice the ham in half lengthwise, parallel to the cutting board. Season the ham on both sides with salt and pepper. Once the ham has been seasoned, heat the ham over a medium-high heat and sear it on the cutting board until the top is caramelized. Then, flip the ham and sear the other side until it is caramelized as well. For the final step, lower the heat to a medium-low. Cook the ham for about 20 minutes. In this time, you want the internal temperature to be around 160-165 F. You can tell by using your finger. If it is still warm, add some more heat. If it is too cool, add more heat.
