Preheat oven to 180°C
Marinate: Season the chicken breasts with salt and pepper and a bit of the oil. Let it sit for at least 5 minutes. Meanwhile, heat the remaining oil in a large frying pan. Once hot, add the chicken breasts and cook for 5-6 minutes on each side. You’ll see that the meat will be slightly brown on the edges. Remove the chicken breasts and set aside. In the same pan, add the tomato sauce and the chicken broth. Allow it to simmer for 20 minutes. Add the chicken breasts back to the pan and cover for an additional 10 minutes. Take the chicken out of the oven and allow it to rest for 10 minutes. Preheat oven to 180°C. Mix the chopped herbs, parmesan and salt and pepper in a bowl and set aside. The chicken can be cooked and served as is, or you can serve it in a bun or stuffed into a bun.
