Instructions Preheat oven to 250F. Place steaks on a rack over an oiled baking sheet and season with salt and pepper. Roast for about 20 minutes per side, until well browned and crisp. If the meat is too dry, add a little water. (This step takes only a few minutes.) (Note): If there is no water added, after cooking, turn the oven off and let the steak rest for 10 minutes. Then, return the pan to low heat and continue to cook the remaining steamed meat. Add water when needed. Serve with mashed potatoes and vegetables. Also, if the sauce is thick, thin it with water or milk. For a thinner sauce, use half the amount of water used in cooking the beef. To make the gravy, put the flour in small bowl and add the stock. Whisk together and pour over the cooked meat and serve. Garnish with parsley, lemon zest, or chopped fresh herbs. Or, serve with rice and salad. Serves 4. Once you’re ready to go, you’ll want to turn off the burner and cover the skillet with foil to keep the steam from escaping. Then, place the lid on top of this and cook the beef over medium heat for about 5 minutes per side. This will take care of any excess grease that may have built up on both sides of your steak during the cooking process. If you don’t have a skillet, try using a cast iron skillet. Or, if your skillet is already seasoned, simply add a little olive oil to it and put it over the hot pan. Cook the onions and peppers until they are tender, about 3 minutes. Add the garlic and saute for another minute or two.

This is done by placing the sliced meat directly on a hot surface, such as the stovetop, which cooks the exterior while the interior is kept warm. Once the internal temperatures of both the outer and inner portions of meat reach the preferred level, either side will be done. If the inside portion is too dry, add a little more water. For example, if the center portion of a steak is medium-rare, you would add 1/2 cup of water to make it medium. As the external portion becomes medium rare, increase the amount of liquid to 2/3 cup. When the entire piece of steak reaches medium well, remove it from the oven and allow it to rest uncovered for 5 minutes. Remove the pan from under the heat source and let it sit for another 5-10 minutes to allow the juices to redistribute. Then slice the remaining meat off the bone and serve. Note: If you are using a meat thermometer, check the temperature of any meat you plan to serve immediately after removing it form the refrigerator.
