Roasted Sausage and Heart Recipe

For this recipe, you will need: 2 hearts (you can choose beef or veal hearts for this recipe, but chicken hearts are a traditional choice), 1 pound of ground sausage (or 1/2 pound, but the ground sausage will be more flavorful), 3 cups of grated parmesan cheese, 3 teaspoons of thyme, 3 garlic cloves, 1/4 cup of basil, 3 tablespoons of thyme and oregano. I use a mortar and pestle to grind the ingredients. You can use a food processor, but the flavor will be a bit different. I buy the ground sausage at a local grocery store and then freeze the ground sausages. Once I am ready to cook the chicken hearts, I simply thaw the sausage in the fridge. I then place the hearts and thawed sausage in a large bowl, mix the ingredients and mix well. Then, I take a spoon and cover each heart evenly with the sausage mixture. I then place the hearts on a wire rack and bake at 350 degrees for 20 minutes, or until cooked through.
