When it’s time to make the bratwurst, mix the pork leg, curing salt, herbs, and spices together with your hands. Take the bratwurst and stuff it into the pork leg. You can either roll it up, or just tie it closed. You want to make sure that you don’t leave any air pockets in the casing, because this will affect the shape of your bratwurst when it cooks. Do not worry about the size of the bratwurst. They are cheap, and cooking is about more than just making them look good. After 4 minutes, flip the bratwurst. After 3 minutes on the second side, transfer the bratwurst to a rack. After 10 minutes, preheat the oven to 350°. Bake the bratwurst for 10 minutes, then rotate the pan. Bake for 10 more minutes, then rotate the pan again. Bake for 10 more minutes.
