Here is what i do:- I take a large roaster and place it inside a pan with about 1/4 cup of water. Put the beef in and let it sit for about 10 minutes. Remove the meat from the pan and set it aside. Add the olive oils to this pan along with the salt and pepper. Cook the onions and garlic until they are soft and translucent. Once the vegetables are tender, add the wine and cook until it reduces. Now add in 3 cups of beef broth and bring it to simmer. This will take about 5 minutes depending on how thick your beef is. When the liquid is reduced, remove the onion and carrot from their skins and add them to reduce the sauce. Next add 2 cups stock and the bay leaves.

Is a rump roast a good cut of meat?
Well, yes, actually. But this is because the meat is usually tougher than the ribs that come with it. And since the bones are tough, there is no way to cook them well. So, if I were to tell you that a whole rib would be a great cut to add to your slow cooked pot pie, I would probably be lying. However, a bone-in rib will work just fine.
