Does eye of round make good steaks?
Eye of Round is among the least redeemable of cuts, especially when considering the price of beef. But save money and eat better with the chuck steer, which is tougher than other cuts and works well. Some cuts work well, while others don‘t. For example, ribeye works best when marinated in red wine vinegar and spices. Ribeye is often used in casseroles, such as lasagna. Other cuts do not work as well in this way. A favorite of mine is a tenderloin. Another is strip loin, sometimes called a sirloin steak.
