You can also use this method to make a large briskie. For a larger brisker, you will need to increase the cooking time. If you don’t have a roaster, cut the meat into smaller pieces. Cut the fat off the outside of both sides of your briskes and remove the lean meat from the center. Remove the skin and trim away the excess fat.

We are not suggesting that all briskets should be cooked to this exact same temperature, nor are we suggesting any particular method of cooking. We simply want to make sure that our recommendations are based on common sense. If you are planning on cooking a briskete over a gas stove, you will need to adjust your cooking time accordingly. You can also cook a large briskette in an oven, which will require less time than a stovetop grill. However, if your briskettes are small, such as those used for sandwiches, steaks, or roasts, there is no need for extra time spent on precise cooking times. This is especially true if the briskett is going to be sliced or diced before being cooked. Just keep in mind that the longer the cooking process, generally speaking, means the greater the risk of overcooking.

The whole cook should take about 8 hour to reach the desired temperature. Every briskie you make will differ in cooking times. This is because the briskes are cut differently. For example, a large cut of brisky is usually cut into smaller pieces than a small cut, making it easier to cook. Also, since the meat is cut thicker, there is more surface area for heat transfer. So, this means that the longer the cook, especially the larger the piece, takes, less time is left for all the other factors to work out. If you want to get the best results, you need to know how long it takes to finish cooking.
Does brisket get more tender the longer you cook it?
If using this method, reduce the cooking time by about half. Allow the meat to cook for about 2 hours, or until the internal temperature reaches 160 degrees F. You can cook a steak quickly, or you might want to cook it slowly over low heat. If you want tender meat that will hold together well, you need to slow cook the briskets. Slow cooking will also make the connectives turn into gelatine, a substance that helps bind the protein in meat to create a firm, juicy meat product.
