Ingredients: 1 1/2 pounds beef tongue Fillet pork rinds 1 gallon water 1 tbsp salt 1 tsp turmeric 1/2 tsp ginger 1/4 cup lemon juice 1/4 cup vinegar 1 cup water 1/4 cup minced onion (optional) Directions: 1) Fill a large pot with water, salt, and turmeric and bring to a boil. 2) While waiting for the water to boil, wash the tongue. Remove the fat and silver skin from the tongue. Using a sharp knife, cut the tongue along the outer edge to cut the meat off the bone. 3) Add the pork rinds to the boiling water and cook for 2 minutes. Remove the pork rinds and rinse in cold water. 4) Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and sauté for 1 to 2 minutes. Add the tongue meat and cook for 5 minutes. 5) Add the salt, ginger, lemon juice, vinegar, and water to the pan.
