A Step-By-Step Guide

1. Using a sharp knife, cut the ham in two equal pieces.
2. Starting from the top, carefully cut the skin away, being careful to keep it in place on the top.
3. Carefully cut off the meat from the shank, leaving a small piece of skin and bone on one side.
4. Using the back of your knife, score the shank at a 45 degree angle.
5. Place the bottom of the ham on the table and then, holding the knife firmly, begin to cut the ham length-wise down the back.
6. Start from the top and work your way down, stopping once you have reached the shank.
7. The ham should now be a long, roughly triangular piece.
8. Using your fingers, peel the meat off of the shank.
9. Using your fingers, carefully peel away the skin, being careful not to tear the meat.
