I have also used this recipe to make a quick and easy vegetable soup. Just add the veggies you want to cook and simmer until they are tender. Then add 1/2 cup of broth and cook until the carrots are soft. Next add 2 cups of cooked rice and stir well. Finally add 3 cups chicken stock and bring to boil. Simmer until all the liquid is absorbed.
