Okay, so I have been trying to get to an easy baked potato recipe lately, I have been wanting to bake potatoes for breakfast and it turns out to be easier than I thought. Take two healthy large potatoes of the same type, rinse well, and then rub each potato with half an organic garlic clove. Do this on a dish that can be heated in the microwave later on (most plates will work for this). Heat up on high in the microwave for five minutes or until potato is soft, then remove from microwave and flip it onto a plate so that it’s cooked on both sides. Cut the bottom out of the potato and drizzle with olive oil. Place potatoes back into the microwave and cook for another two minutes. Remove and take a large fork and mash the flesh of the potato out. Drizzle with fresh black pepper and a little salt. Enjoy!
