In this video we are making some frozen cod fillets using cod fillets that we have brought from the local supermarket. We are making a delicious Mediterranean style cod fillet bake. It is a really simple meal and only takes about 20 minutes to make. We start off by cooking our cod fillets in a large ovenproof dish. Then we add the lemon juice and season our cod fillets. Next we add some olive oil and brown sugar and stir it all together so that the cod is coated in the mixture. Once our cod is coated we pop it in the freezer for 30 minutes. While our cod is chilling out in the freezer we get started on the tomato sauce. We start by chopping up some tomatoes and also adding some garlic and oregano. Then we add a tin of chopped tomatoes and some tomato puree and let it all simmer for 30 minutes. Now that our cod is frozen and our tomato sauce is simmering we start to make our tomato bake. We take our tomato sauce, defrosted cod fillets and line them up in a circular shape on top of our tomato sauce. Once we have lined the tomato sauce up we add some grated mozzarella cheese and cover it with foil. We bake it all for 25 minutes at 180C in our oven.
