Potatoes are generally considered a healthy food. But what you don’t know is how many carbs a single potato actually has. Generally, a potato is considered a low carb food. But there is a difference between low carb and no carbs, or even carbs from fruit. The fact is that one potato is very carb-heavy and does not count as a low carb food. In addition, you need to consider the carbohydrate load of side dishes. For example, a bowl of cheese grits or a dinner salad with lettuce, broccoli, and tomatoes have a high carb count.
Carbs and Potatoes
The potato is a starchy tuberous root vegetable with a sweet, starchy flavor. A large potato has about 0.8 grams of carbohydrate per 100 grams of potato, while a medium potato has about 1.5 grams of carbohydrate per 100 grams of potato. The potato is a good source of potassium and fiber, but high levels of carbohydrate and starch in a potato can cause rapid absorption of glucose into the bloodstream. People who eat a lot of potatoes may be at risk for a rapid increase in their blood glucose levels, which can lead to increased risk of developing Type 2 diabetes.

If you want to lose weight, you should choose low-carb foods to help you eat less. High-carb foods will fill you up faster and make it easier to reach for seconds. They also make you feel more satisfied, so you’re less likely to overeat later.

Sweet potatoes are a great carb source, but are high in calories and don’t provide much fiber.
Why Do I Care?
Potatoes have a bad reputation for being high in carbohydrates, even though they are actually very low in carbohydrates. The reason that they are often believed to be high in carbohydrates is because there is an assumption that any starch is unhealthy. This is not true. There are three types of carbohydrates: Simple carbohydrates, complex carbohydrates and dietary fiber. There are foods that contain a lot of all of these three types of carbohydrates. Some examples of these foods are white flour, sugar, pasta, bread, cookies, and white rice. These are all high in simple carbohydrates, which your body quickly converts to sugar. Whole grain bread, oatmeal, whole wheat pasta, and brown rice are all high in complex carbohydrates and dietary fiber. These can help slow the digestion of simple carbohydrates, so your blood sugar level is not as high and you feel full faster. For example, whole wheat pasta has a slower digestion than white pasta. It will help you feel full and won’t spike your blood sugar as much. Beans, whole wheat bread, and whole grains are foods that are high in both complex carbohydrates and dietary fiber. They will slow the digestion of simple carbohydrates, help keep your blood sugar steady, and fill you up without making you feel hungry. Fiber is found in many fruits, vegetables, whole grains, beans, nuts, and seeds. The fiber in these foods helps you feel full, but also provides vitamins, minerals, and antioxidants that are good for your health.
