Do You Need a Chimney?

The other thing to remember is that, not all chimneys are the same. For instance, a straight chimney (see photo) will be very effective in a smoker but it doesn’t allow for the smoke to rise, so you can’t have a hot fire. A straight chimney will direct smoke out the top and also out through the top, so you can’t cook on top of the cooker. That’s why you want the round chimney, it allows you to cook on top and it allows the smoke to go through to the sides.
