when roasting a chicken for lunch there is a concern of not getting a dark meat, I have roasted them before but they don’t taste like I remember, I am confused if the chicken is under cooked or if they are overdone. They look awesome, I would like them hot as soon as they come out of the oven, not really a breakfast or dinner. I want to get a dark meat, I would like to do a 2 hour roast not sure if it needs more. It’s a 6 pounder.

Today I’m sharing a basic guide on how to cook a roast chicken. For today’s experiment, I roasted a 6 pound chicken at 425 degrees for 45 minutes. I bought my chicken from my local supermarket, and I’ll be honest, it was a little dry. After roasting, I let the chicken rest for 15 minutes. To remove the chicken from the oven, I just picked it up and let it rest on a cutting board. After 15 minutes, I took the chicken and placed it back into the oven for 20 minutes. After the second 15 minute rest, I removed the chicken and let it rest for about 10 minutes. Then I sliced it in half, removing the legs from the carcass and slicing them at the joint. I removed the thigh and breast meat from the carcass and placed it back into the baking pan. Now that the chicken was sliced, I put the pan back into the oven for another 20 minutes. And that’s it!
