During the second two hours it should be heated to a higher temperature. The last two hours will be a high heat cook. The high heat cook will allow the juice from the roast to seep out and will allow the meat to become even more tender.

Soaking the chuck roast will help to cook the roast faster. If you don’t have an instant read thermometer, you can wrap the roast in aluminum foil and weigh it down with a can.
