As long as the fat is trimmed off before cooking begins, there is no need to worry about it. Also, if the thickness of fat varies, this is something you should consider.
How many hours does it take to cook a brisket?
Sadly, overcooked meat is dry and tastless, which means you’ll have no way to rehydrate it. Once you’ve cooked it enough, you’re stuck with dry fiber, no matter how much pressure you apply. And even if all you do is cook it longer, nothing will make it taste better. If you want to cook something extra juicy, try cooking it in low heat for about an hour. Then you might be able to get some moistness back in there. But don’t expect to be eating any meat that’s cooked this way. That’s just not going work.
