The safest way to defrost poultry is to defrost in the sink, but make sure to use warm water and keep the water above 160°F. If you’re feeling adventurous, you can easily remove the skin by carefully pulling back the chicken skin with your fingers. But it’s better to leave the skin in place to ensure the chicken stays fresh. Remove the chicken skin before placing it on a rack in the pan. Whether you’re using a sheet pan or a roasting pan, it’s important to have a rack so the chicken can easily and evenly cook in its own juices. Place the chicken on the bottom of the pan or sheet pan, and then rotate the pan so the chicken is sitting vertically on the pan. There’s no need to remove the chicken from its packaging.
