The surface of the tri tip will become slightly brown during cooking, which will form a crust. This is normal and should not be avoided. However, if you prefer your meat to be pink, then you should cook it until this occurs.
Preparing Tri Tip
Tri tip (or short ribs) are an easy way to cook in the oven. To prepare tri tip, you will need a wire rack on top of a baking sheet. You’ll also need a meat mallet. Place tri tip and fat side up on the wire rack. Lay the tri tip fat side down on the meat mallet. Carefully pound the tri tip to a thickness of about 1/2-1 inch. Remove the tri tip from the mallet and place on the baking sheet. Bake at 425 degrees for 15 to 20 minutes. Use a meat thermometer to make sure the tri tip is at least 160 degrees. You can also set an alarm to remind you to check the tri tip after 15 minutes.
Oven Cooked Tri Tip
Oven Cooked Tri-Tip: 1 hr before cooking, generously rub steak with Kitchen Boucaille, then pat dry. Season steak with 1 tablespoon of Kitchen Boucaille. Sauté steak in skillet for 8 minutes per side, uncovered. Remove steak from skillet, and place on a rack set on a rimmed baking sheet. Sprinkle steak with 1/4 cup vegetable oil. Bake at 450 degrees F for 10 minutes. Reduce temperature to 350 degrees F and bake for 35 minutes per side, basting steak with vegetable oil. Serve with Kitchen Boucaille. Yields 6 to 8 servings. Serve with 6 to 8 carrots, cut in 1/2-inch chunks, and 1/4 cup parsley and 1/2 cup basil leaves, cut in 1/2-inch pieces.
Tri Tip Recipe
1. Add the seasoning mix into the pot. Put the tri tip on the bottom of the pot and pour the fat on top of the tri tip.
2. Put the tri tip in the oven for 1 hour.
3. Turn off the oven and let the tri tip sit for an hour.
4. Turn the tri tip back on to the heat until it reaches 160°.
5. Add the honey and cook the tri tip until it reaches 160°.
