This amount is higher than the Environmental Protection Agency’s recommended safe limit. The fish should be cooked to an internal temperature of 135° Fahrenheit and a total cooking time of 15 minutes. However, the American Heart Association recommends a limit of 8 grams of mercury per 3.5 ounce serving. The fish should be cooked to an internal temperature of 145° Fahrenheit and a total cooking time of 12 minutes. Additionally, the Omega-3 fatty acid content of fish can be increased by cooking the fish for 30 minutes, rather than the recommended 15 minutes. The FDA recommends that pregnant women limit their consumption of tuna to 12 ounces per week, and that women with high blood pressure, diabetes, or thyroid disease should avoid consuming shark and swordfish.
