Timing
The best way to cook a semi-boneless leg of lamb is to cut it into 8 equal pieces and then sear it on each side. It can then be left to rest for a couple of minutes before it is put into the oven to roast. This way, it retains its juices as it roasts and the meat is done at the same time. In order to roast, you will need to preheat the oven to around 200-230°C. Once it is at this temperature, put the lamb in the oven, roast it for about an hour or until it is cooked through. Add the rest of the vegetables and herbs before you put the lamb back in the oven for 5-10 minutes. You will find that the leg of lamb will have taken on a nice brown color and will be falling off the bone. Enjoy with a simple mint and tomato salad.
