A pressure cooker works by using high pressure to rapidly cook food. The high pressure is created by cooking a liquid called a “liquor” under pressure. This cooks the food, but if the meat is not cooked long enough, it will not be tender and can be tough. To get good results, you need to cook the meat for a long time at high pressure. In order to measure that time, there is an indicator on the pressure cooker that you should look for. It will show a full pressure when the meat is cooked, but once the pressure is released, it will be marked down. In the time before the pressure is released, you should check periodically to make sure the meat isn’t overcooking.
