My family always has pork shoulder in our fridge at home. It can be roasted in the oven, braised in a slow cooker, or stewed in a pressure cooker. There are so many ways to prepare pork shoulder, but I find that it’s best cooked for longer periods of time. There is a specific temperature that the meat needs to be at in order for the meat to be juicy and flavorful. Many cuts of meat need to reach an internal temperature of 145 to 150 degrees before they can be called done. Therefore, the meat should be taken out of the oven and then allowed to sit before it is carved. It will continue to cook in the internal juices and won’t get dry and tough. I recommend leaving the meat in the oven for at least one hour before carving. The internal temperature of the meat should be 150 to 155 degrees.
